- Wash potatoes and scrub well, place on a Softiera-insert and place in a suitable pot with approx. one cup of water. Close with a Secuquick softline and heat at highest level up to first soft window, cook at low level approx. 8 minutes, depending on size.
- Peel onion and garlic and dice finely, drain capers, mix with wine vinegar and lemon juice. Fold in olive oil, season well with salt and pepper.
- De-pressurise Secuquick under running water, let water on potatoes evaporate a little and halve or quarter them. Cut olives in slices. Mix both with the dressing in a Lasagnera, steep closed at least 1 hour.
- Pluck parsley leaves, chop and sprinkle over the salad to serve.
