- Sift the flour together with the baking powder and keep aside.
- Dissolve the demerara sugar, white sugar and honey in hot water. Stir in the oil. Add the spice powders (clove, nutmeg and cinnamon) vanilla essence, ginger paste and combine well.
- Pour this mixture into the flour and mix into a smooth batter. Dissolve the baking soda in 1-2tsps of water and quickly stir into the batter.
- Pour the batter into a suitable greased and lined cake tray. Bake in a 24cm roaster for 60-65 minutes, following the AMC cooking method for baking. Invert onto a wire rack to cool. Slice and serve.
Tip : Do not leave the cake batter aside for a long time after the cooking soda has been added to it, as the cake may not rise.
