Preparation

  1. Sift the flour together with the baking powder and keep aside.
  2. Dissolve the demerara sugar, white sugar and honey in hot water. Stir in the oil. Add the spice powders (clove, nutmeg and cinnamon) vanilla essence, ginger paste and combine well.
  3. Pour this mixture into the flour and mix into a smooth batter. Dissolve the baking soda in 1-2tsps of water and quickly stir into the batter.
  4. Pour the batter into a suitable greased and lined cake tray. Bake in a 24cm roaster for 60-65 minutes, following the AMC cooking method for baking. Invert onto a wire rack to cool. Slice and serve.

Tip : Do not leave the cake batter aside for a long time after the cooking soda has been added to it, as the cake may not rise.
