    Braised Beef in Red Wine Sauce

  1. Peel and dice onions and garlic, clean celery, peel carrot and dice both likewise. Take meat, vegetables, spices and herbs in a freezer bag, pour 250 ml red wine. Close bag and marinate in the refrigerator approx. 24 hours.
  2. Heat pot at highest level up to frying window. Take meat out of the marinade and dab dry. Pour marinade into a colander and collect the liquid.
  3. Roast meat on all sides at low level, remove and season with salt and pepper. Fry vegetables, add tomato purée and fry likewise briefly.
  4. Pour marinade and remaining red wine and add meat again. Place Secuquick softline and close. Heat at highest level up to first turbo window, quick-cook at low level approx. 40 minutes.
  5. At the end of cooking time, place Secuquick in the inverted lid and let it depressurise by itself. Remove meat and keep warm, pass sauce through a colander. Thicken as desired, refine with cream and season.
