Orecchiette with prawns and vegetable-pistachio sauce

Preparation

  1. Clean vegetables, cut in small pieces and place dripping wet in a suitable pot (sugar snaps don’t have to be pre-cooked. They can be cooked directly with the orecchiette, fresh and cleaned or frozen). Heat at highest level up to vegetable window using Audiotherm and pre-cook approx. 2 minutes. Remove from the hotplate and cool down a little.
  2. Peel and halve garlic, rub HotPan 32 cm with it vigorously. Place lid and heat on the Navigenio at level 6 up to frying window using Audiotherm.
  3. Add prawns and fry at level 2 a short while, add orecchiette, vegetables and 2/3 of the pistachios. Pour water, season with salt and pepper, stir and heat at highest level up to vegetable window using Audiotherm.
  4. Cook at level 2 approx. 5 minutes. Season with salt, pepper and olive oil. Remove from Navigenio and let it simmer approx. 3 minutes with closed lid. Serve sprinkled with remaining pistachios.
